After 'dancing in and out of catering' for 20 years Zoe Burdass says she couldn't wait to get started in a job that she loves so, with husband Ian, taking on the St Quintin Arms in late 2011 definitely wasn't rocket science. And now the historic and picturesque 16th century coaching inn offers a wide selection of dishes made with a selection of locally sourced produce from around the villages near their own in the Yorkshire Wolds. Zoe focuses her attention on the pub and has already turned it round from its chequered past, while Ian works on the family farm rearing the renowned Burdass lamb that features extensively on the inn's menus.
The Burdass family has been farming for more than 80 years in the East Riding. Their flock's diet of grass and turnips has stayed much the same and the cross-bred Texel and Suffolk breeds provide large, lean meat full of flavour which Zoe markets as LUST for Burdass Lamb - Lamb U Should Taste! Burdass Lamb ran as a retail company for six years supplying Michelin-star restaurants, farmers' markets and food festivals, but when lamb prices increased dramatically their focus turned more to commercial supply. But the St Quintin Arms menus give a great opportunity to showcase this excellent meat.
