Chef - Peter Neville, The Pheasant Hotel

Peter Neville is very much a hands-on chef who takes great pleasure in serving fresh, British food with an emphasis on locally foraged ingredients. With fields, river and woods only a quick hop over the garden wall there is no shortage of fresh finds and inspiration.

Menus are heavily influenced by changing seasons and the best ingredients available locally. Peter also believes in experimenting with “regular” foods and gained much experience from his time at two Michelin Stars-holder Hibiscus in London and before that as head chef at the one Michelin star holder The Star Inn, just around the corner in Harome.

With the greater emphasis on supporting local businesses and harvesting from the world around us, it is fair to say that Peter has been ahead of the game for years.

Peter Neville was involved in the acquisition of The Pheasant Hotel in 2009 and co-owns the property with Jacquie Pern, who oversaw a complete refurbishment of this now iconic country house hotel.
