Chef - Tim Bilton, The Spiced Pear

Tim Bilton, Yorkshire born and bred, cemented his reputation as an astute and capable chef with his turn-around of The Butchers Arms in Hepworth near Holmfirth, right in the middle of Last of the Summer Wine country. Now, after five years at The Butchers Arms and with it ranking in the country's top 50 gastropubs, Tim has stepped-up to his first independly owned venue, The Spiced Pear Hepworth.

The Spiced Pear continues Tim's commitment to using the best seasonal produce to deliver exquisite Brititish classics and other dishes with a twist that is Tim's style. The Spiced Pear is more than a restaurant offering lunch and dinner as it also offers brunch and a range of afternoon tea suggestions, including savoury items not usually offered with afternoon tea. What's more, The Spiced Pear has its very own real ale and a cocktail bar, perhaps for those just wanting a drink.

With time spent working for Raymond Blanc, Tim's cooking shows an understanding of classical technique and builds on that with the best the Yorkshire larder offers. Tim's tenure at The Butchers Arms was marked by a string of awards and appearences on BBC2's Great British Menu show. 2012 saw Tim launch a range of chutneys and pickles, again featuring local ingredients. 2013 began with publication of Tim's first book "Bilton Basics" and then in May, the launch of The Spiced Pear which with great food and stunning contemporary design is a destination restaurant of which Yorkshire can be proud.
