Producers - Haxby Bakehouse
Phil and Tina Clayton have owned the delicatessen in Haxby, four miles north of York, since 2008. Behind the shop is the bakehouse where Phil and his team lovingly make and bake a wonderful range of organic breads, pastries and other seasonal delights.
With a history of home baking, Phil mastered many traditional techniques that have migrated to the artisan bakery which uses about a tonne of Yorkshire Organic Millers and other organic flour each week. All the Haxby Bakehouse breads are made using traditional slow fermentation methods. The bakery uses low yeasted overnight sponges, natural sourdough levain or a combination of the two. Fermentation is started at least sixteen hours before it goes into the oven. Every one of the up to 2,000 loaves baked for the weekend trade ae genuinely handmade and savoured in the Yorkshire Food Finder kitchen.
The traditional processes give the Haxby Bakehouse breads plenty of flavour without any artificial flour improvers, emulsifiers, other additives as well as using less salt than many industrial bakers.
